Chia Pudding

I was looking at things to do with chia seeds that were easy and satisfying. They aren’t the cheapest things ever, but they have a good nutritional value and I like them a lot. I only just discovered them about six months into my diet but I’m going to keep using them forever!

Now to find something equally as interesting to make with flax seeds. . .

Chia Chocolate Pudding
Serves 2

Ingredients
1 cup coconut milk
1 ripe banana
4 tbsp chia seeds
2 tbsp cocoa powder
1/4 cup hazelnuts

Instructions
1. Mash the banana and separate into two cups
2. Mix the chia seeds, cocoa powder and milk in a bowl then pour into the cups over the banana mash.
3. Smash the hazelnuts or pulse into small chunks in a blender. Pour some of those nuts over the cocoa mix.
4. Refrigerate overnight (around 8 hours).
5. If you would like a smoother consistency, feel free to blend the pudding before serving!

Variations:
Tropical Chia Pudding
Replace the banana mash with 1 fresh mango, pureed. Replace the hazelnuts with shredded unsweetened coconut or sliced strawberries. Omit the cocoa powder.
